Yirgacheffe is known for it’s clean, floral and juicy washed coffees and high quality sun-dried lots with genuine and unique fruit and berry flavours. The farm features some of the most complex and intense coffee flavours in Yirgacheffe as the farmers planted both improved varietal and traditional old trees with organic fertilisers. Coffee cherries are pulped by a traditional Agaarde Discpulper, fermented in water for 24-36 hours. Coffees are washed in channels and graded in water by density, which the high quality beans will be separated as higher grade lots. Parchement is dried on raised beds in the sun for 10-12 days.
